I've done it a few times.

I boiled sassafras roots and sweet birch twigs. I called it root beer, but the more appropriate term would be birch beer.

Pretty simple ingredients to what real root beer was made from, but it tastes VERY similar.

I boiled everything together, strained it out and boiled it with some sugar to make a syrup. The color is going to be much lighter then with root beer extract because you are not adding caramel color.

that is very interesting. not exactly what i originally had in mind when i mistakenly created the post (was leaning more toward using fruit juices), but something i will give some thought to. i'm always up for trying something different. thanks.

Oh, I've done that too. If you are using fresh fruit though, you gotta be careful because it has a tendency to go past the soda stage pretty fast. But, if you keep it in the fridge after it is fizzy enough (the bottles) then you should be fine.

Last year I made strawberry soda using fresh strawberries, I basically hand juiced the juice, added some lemon juice, sugar and a little yeast. The main problem was that it still had all the pulp. So, when I slowly opened the bottle all the nasty strawberry pulp flew all around the room. But, yeah, its pretty easy.

For the past two Thanksgivings I have made sparkling grape juice and apple juice. I get the concentrate in cans, and actually the first time, watered the juice in half and then added sugar to bring it up to the right level. It was nice and fizzy though!

now you say you used "sweet birch twigs" in your root beer/birch beer... can you explain that a bit more? i'd be interested in making root beer or birch beer from natural ingredients

My cousin lives on Lookout Mt. GA/TN (right on the border). He has sweet birch trees on his land. The link I post will tell you why its called sweet birch and some other things about them.

I used a small bundle of twigs, not sure how specific I can get on them, and similar amounts of sassafras roots. When you collect sassafras roots you want pencil size roots, not big huge things.

I kept them in the freezer until I was ready, and then I boiled them with the lid on in a pot. And then strained the liquid out, added some sugar, boiled it a little more, and then put it in a bottle in the fridge until I was ready. The main problem with that is that unless you know the right amount of sugar for the right amount of soda, it might be hard to make it.

I have a book on Making your own Rootbeer, Soda, and Pop. It is very helpful, and if you are into making soda from scratch, a good investment.
