Fruit wines tend to age quicker than grape wines, and light-colored wines tend to age quicker than darker ones.  But I really can't say which would age the quickest.  Winemaking is not something that really can be rushed.

Are you looking for wines for you to MAKE that age quickly. Or are you looking for wines that you can BUY that age quickly.

Yeah, it does seem to mellow pretty fast. Though, if you try drinking it a month after making it, it is a little harsh.

the strawberry I made aged a year and was excellent

wine from Welch's concentrate is good after 3 or 4 months
